sweet potato toast flight

completely customizable and THE BEST choice if you cannot decide whether you want to sweet or savory.

main base ingredients

  • 1 large sweet potatoes washed and dried
  • 1/2 tbsp olive oil

Peanut butter + banana sweet potato toast:

  • 1 tbsp peanut butter
  • ½ banana
  • Drizzle of honey

Hard boiled egg and avocado sweet potato toast:

  • ½ avocado mashed
  • 1 hard boiled egg
  • Flakey sea salt

Feta egg and spinach sweet potato toast:

  • 1 cup spinach sauteed
  • 1 fried egg with salt and black pepper
  • 1 tbsp feta cheese

Yogurt and berries sweet potato toast:

  • ¼ cup plain or vanilla Greek yogurt
  • ¼ cup berries of choice
  • 1 tbsp sliced almonds
  • 1 tbsp seeds of choice hemp, chia, flax, granola

 

directions

  1. Preheat the oven to 400F and line a large baking tray with parchment paper.
  2. Stab sweet potato a 8-10 times. Wrap it in a paper towel. Microwave for 3 minutes.
  3. Use a sharp knife or mandolin to slice off the ends of the sweet potatoes and discard. Then, the sweet potato lengthwise (long ways) down the middle. Carefully make about 3-4 slices about ¼” thick.
  4. Line a baking sheet with parchment paper, then drop your slices on it (ensure they're not overlapping). Drizzle a teeny tiny bit of oil on each slice.
  5. Bake for 15-20 minutes, until they are able to be pierced with a fork but are not too soft!
  6. Allow to cool. If you want them even more crispy, you can toast them up OR toss them on "broil" in the oven for an extra 3-5 minutes.
  7. Top with your desired toppings!
