Ingredients
- 20 pitted medjool dates
- ¼ - ½ cup nut butter (peanut butter would be the OG snickers flavor)
- ¼ - ½ cup granola
- ½ cup chopped nuts (peanuts would be the OG snickers flavor)
- ½ teaspoon flaky salt, optional
- 12 oz. (340 g) chopped chocolate or chocolate chips
- 1 teaspoon coconut oil, optional (helps chocolate melt better!)
Recipe
- Line a small baking sheet or large plate with parchment paper or wax paper. Remove the pits from all the medjool dates.
- Open the dates in the center and gently pull apart the sides so the date can easily lay flat. Lay the date on the line parchment paper. Repeat with all the remaining dates, lining each one up next to the previous date. (Essentially this is the first layer of the snickers bar bark.
- Place another parchment paper on top of the layer of dates. Using your hand or the bottom of the cup, press or smash the dates into a single layer. Try to fill as much of the space in between each date as possible...ideally no holes remaining!
- Spread your nut butter evenly on top of the layer of smashed dates.
- Sprinkle your granola on top of the nut butter, followed by your peanuts!
- In a microwave safe bowl, heat the chocolate and coconut oil (if using), in 30 second increments, stirring in between each increment. (Might need to do 2 - 3 times until the chocolate is fully melted.)
Drizzle the melted chocolate on top of the date/nut butter/granola/nut layer. Use a spoon, flexible spatula or icing knife to spread the chocolate on top of the peanut butter layer. - Top with a pinch of flakey salt.
- Transfer the snickers date bark to the freezer for about 20 - 30 minutes to chill and set. Once the snickers crunch bar is set, remove the bark from the fridge or freezer, use a sharp knife to cut the bar into your desired number and sized pieces. This healthy snickers candy bark is best enjoyed served from the fridge or freezer!

Notes
- I used Nuttzo as my nut butter because it's my absolute favorite and has added omega 3's from chia and flax seeds. It can usually be found at Costco, but of course can purchase online.
- For the granola, be sure to read your ingredients label...many granolas have a ton of uncessary ingredients (I know, shocking....). I recommend brands like: Purely Elizabeth, Alter Ego, Struseli, NuTrail, Farmers We Know, etc.
- You can use any type of nut really! Walnuts tastes incredible, as do cashews.
- For the chocolate chips, I strongly recommend reading your ingredients!!! There shouldn't be more than 4 ingredients in your chocolate. I recommend brands like: Hu, Pascha, Just Date, Enjoy Life...which can all be found at Sprouts, Whole Foods, and Natural Grocers!
- Here is a helpful link to remember which ingredients on a label I recommend steering clear of!
