i am so over seeing every protein bar ingredient list - riddled with tons of soy lectins, canola oils, etc….so I decided to try my own!

· recipes - sweet

These are THE TASTIEST, very affordable, high fat / protein bars.

*NOTE: to make the recipe HIGHER FAT...

  • swap the 4-second spray of Chosen Foods Avocado Oil w/ 1 tsp coconut oil to melt the chocolate chips.
  • swap the 1/4-1/3 cup PB2 Pure Peanut Butter Powder mix with 3-4 tbsp of nut butter!

recipe

  1. Place the rice cakes & cereal in a large bag. Zip all air out of the bag. Smash the rice cakes and the protein cereal using a flat object (even a cup will work) until a very powder-esque small-bite consistency.
  2. Drop the smashed product into a large bowl. Add in the protein powder. Stir/mix well.
  3. Next, in a separate smaller *microwave safe* bowl or mug, place the chocolate chips. Add a 4-second *ish* spray to the chocolate chips. Microwave for 30 seconds. Remove. Stir well. Microwave for 20-30 MORE seconds, then stir.
  4. In the same smaller *microwave safe* bowl or mug used for (now melted) microwaved chocolate chips, pour the PB2 powder in. Add JUST ENOUGH water until a thick 'batter' consistency is reached.
  5. Next, add in the tbsp of peanut butter / choice nut butter. Stir well.
  6. Add the peanut butter chocolate chip mixture to the larger bowl with rice cake, cereal, powder mixture. Stir very well using a folding and patty method to ensure all ingredients are WELL COMBINED.
  7. NOTE* if you need a bit more "wetness" liquid, I recommend adding Greek yogurt to the mix!

*NOTE: Different formats: if you pat it down into a 8x8 pan (as instructed above) to make it compact THEN refrigerate, it will be like bar consistency. BUT if you just mix it all and pour it into a big baggie then shake it up, you'll get more traditional "puppy chow" mix! Your preference!
