pesto sausage gnocchi

one of the easiest, protein dense meals out there!

ingredients (makes about 4 servings)

  • 1 package fully cooked chicken sausage (Amylu and Force of Nature are my go-tos)
  • 2 tbsp Katie's Protein Pesto
  • 1 bag frozen cauliflower gnocchi (GREEN GIANT are my go-to's)
  • 1 lemon, juiced

directions

  1. Chop sausage into coins. In a sprayed skillet over medium heat add sausage and frozen gnocchi. Cook for 5 min or so. You may need to cover the skillet to cook gnocchi in the middle.
  2. Once browned, add pesto and lemon juice. Heat 3-4 more minutes and serve over a bed of salad greens. I usually spray my greens with olive or avocado oil, salt, pepper, & lemon juice.
  3. Notes: Adding lemon juice to any leafy green will add the perfect tanginess! If not a sausage fan, use a rotisserie chicken.
