ooey gooey almond butter blossoms

shoutout to Trader Joes® for always killin' it - especially with these almond butter cups! though this particular recipe does have quite a bit of sugar, it's all natural sugars - straight from the honey 🍯

the ingredients

the wet

1 flax egg (1 tbs flax + 3 tbs water) (for paleo option, sub flax egg with 1 regular egg)

1 cup almond butter (sub any nut butter)

¾ cup honey (can use 3/4 cup Lakanto Monk Fruit Maple Syrup [discount code: KTLEO])

½ vanilla extract

the dry

1 scoop vegan protein powder (if using whey, might need to toss an additional teaspoon of protein powder in there)

½ tsp baking soda

¼ tsp salt

Trader Joes Dark Chocolate Almond Butter Cups®

the process

  • preheat oven to 350 º.
  • combine all all ingredients (except cups) in a medium bowl.
  • scoop batter combo into individual muffin tins (about 1/3 way full).
  • bake for 9-11 minutes (until perfectly golden brown on rims).
  • drop one TJ’s dark chocolate almond butter cup in the middle of each muffin tin. ensure you don’t push it all the way down, as you’ll want batter to envelop the cup entirely on the bottom.
