oaty ginger carrot cookies

with 6.7g of protein, and only 1.8g sugar per cookie, these carrot-ginger cookies are kick-ass! baking them for 10 minutes creates the perfect 'undercooked' / squishy texture!

the ingredients

the dry

1.5 scoops protein powder (I love Gainful, Peanut Butter for this recipe)

1/2 cup GF rolled oats

3 tbs PBfit powder

1 tsp baking powder

2 tbs hemp seed hearts

1/2 tsp ginger

1/2 tsp cinnamon

1/4 tsp ground nutmeg

Optional: 1 tbs Lakanto Monk Fruit Sweetener (discount code: KTLEO)

the wet

2 tbs egg whites

1 banana

3 tbs unsweetened apple sauce

the extra love

1/2 cup shredded carrots

2 tbs chopped walnuts

2 tbs unsweetened cranberries

the process

  • preheat oven to 350.
  • mash the banana in a medium bowl. combine the remaining "wet" ingredients in the medium bowl with the mashed banana. add in the shredded carrots.
  • combine "the dry" ingredients in a small bowl. pour this dry mixture into the wet mixture, then fold in the walnuts and cranberries. 
  • take a spoon and drop 10-12 ~2-3 inch dollops of dough on a cookie tray. bake for 10 minutes.
