kaleicious banana muffins

they're green, they're beautiful, they're moist, they're deeeeeelicious. these incredibly protein packed, absolutely scrumptious muffins are the perfect on-the-go treat for breakfast or snack.

the ingredients

the wet

2 large ripe bananas

3 large eggs

2 large handfuls baby kale (or spinach)

1 tsp vanilla extract

the dry

1/2 cup oat flour (1/2 cup of rolled oats, blended up in a blender)

1 scoop protein powder (50% Gainful custom protein powder: here)

2 tsp Lakanto Monk Fruit Sweetener (code: KTLEO)

2 Tbsp ground flax

1 tsp ground cinnamon

1/2 tsp baking soda

the extra love

2 tbs sugar-free chocolate chips (I love Lilys Sweets)

the process

  • preheat oven to 350. line 12-muffin tin with liners, or spray with avocado oil.
  • blend all ingredients in a food processor / blender. pour mixture into muffin tins (1/2 - 3/4 way full). sprinkle with chocolate chips. 
  • bake for 15 - 17 minutes. 
optional frosting
  • mix the Cookie Monster mix with Fage Yogurt, Water or Almond milk until desired frosting consistency is reached. 
  • spread a top the cooled muffins.
