lemon blub oatmeal bake

the combo of lemon and blueberry is so satisfying and refreshing! this is an easy, protein-packed breakfast idea that'll last you the whole week!

the ingredients.

the wet

1/4 cup nuttzo

1/4 cup egg whites

1/4 cup lemon juice

1 tsp vanilla extract

1/2 cup unsweetened almond milk

the dry

1/2 cup protein powder

1 tbs chia seeds

1/2 cup oats

1/2 flax meal

1/4 cup oat flour (1/4 cup oats, blended)

the extra love

1 cup blueberries

icing

2 tbs lemon juice

2 tsp protein powder

the process.

  • preheat oven to 350. line an 8x8 pan pan with parchment paper. 
  • stir all "wet" ingredients in medium bowl. stir all "dry" ingredients in a large bowl, then pour in the wet ingredient mixture. fold in blueberries. pour mixture into 8x8 pan.
  • bake for 20 mins. let sit for 10-15 mins.
  • combine the lemon juice and protein powder for icing, then drizzle atop the oatmeal bake.
