chunky apple cinnamon cookies

vegan, paleo, gluten-free! these cookies soft 'n squishy - plus have 6g of protein PER COOKIE! they're delectable, tasty, and perfect for any season of the year!

the ingredients

the wet

1 tbs flax meal

1/4 cup apple sauce

the dry

1 cup almond flour

1 tbs coconut sugar

1 scoop vanilla protein powder

1 tsp cinnamon

the extra love

1/2 cup diced apple

note: for extra rich flavor, frost these with my protein frosting, just add a little cinnamon to the mix!

the process

  • preheat oven to 350. spray a baking tray with avocado oil (can also line a baking tray with parchment paper).
  • prepare the flax egg by mixing 1 tbs flax meal with 3 tbs water. let gel in fridge for 5 mins. 
  • in a large bowl, combine the gelled flax egg with all "wet" and "dry" ingredients. mix well. fold in the thinly diced apple slices. 
  • using a spoon, drop 10-14 (depending on what size you want!!) balls of dough onto the prepared baking tray. press down lightly on top of each cookie to give the flat-top shape. 
  • bake for 8-10 minutes.
