RECIPE
Wet
½ cup (heaping) shredded carrotS
¼ cup diced apples
¼ cup Greek yogurt
⅓ cup no sugar added applesauce
¼ cup liquid egg whites
1.5 tbsp melted coconut oil
splash lemon juice
Dry
dash cinnamon
dash nutmeg
2 scoops whey protein
½ cup oat flour
1 tbsp coconut flour
½ tsp baking powder
½ tsp baking soda
DIRECTIONS
Combine the "wet" ingredients. Stir well.
Pour the "dry" ingredients into the same bowl. Mix well. Toward the end, start to "fold" instead of stir the batter.
Pour into a 6.5" circular pan that is sprayed with avocado oil.
Bake at 375°F for ~35 min
FROSTING
dash coconut milk/ any milk (as needed)
1/2 cup Greek yogurt
+ dash nutmeg
+ 1/2 cup protein powder
Optional toppings: shredded carrots, walnuts, pumpkin seeds, etc.!
**note: if you use a wider pan, you would cook it for less time. I don't recommend using anything smaller than the 6.5" round pan :)
