healthified alfredo sauce

ingredients (makes about 5 servings; 1 servings = ~2 cups)

  • 1 box pasta, Goodles brand
  • 1/2 cup unsw almond, cashew or coconut milk, Elmhurst or Malk brand
  • 8 oz low-fat cottage cheese, Nancy's or Good Culture brand
  • 1 tsp nutritional yeast, Bragg brand
  • 1/2 tsp each salt +pepper
  • 1/2 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 c grated parmesan cheese
  • 3-4 meatball per serving, AmyLu Foods or Chef Hak's brand
  • optional fresh parsley or basil to top

directions

  1. Cook pasta as directed (most likely boil water, then add pasta, stirring for 5-10 minutes).
  2. While pasta cooks, drop all ingredients except pasta in a blender and blend until smooth.
  3. Spray a large saucepan with Chosen Foods avocado oil spray. Pour the blended mixture into saucepan and heat over medium. Add the meatballs to the mixture.
  4. Cook until heated through (about 5 min). Remember to stir entire time.
  5. Add cooked and drained pasta to the sauce and toss to soak up the sauce.
  6. Garnish with parsley or basil.
