clean carrot tahini cookie

here's a super creative way to use that last over-ripe banana sitting on your counter! combine with carrots (MVP veggie!!), a lil protein, some tahini and you're set for an any-time-of-day treat.

the ingredients

the cookie

1 cup rolled oats

2 tbs pbFit powder

¼ tsp ground ginger

1 ripe banana

1 tsp water

¼ tsp honey

½ cup shredded carrots

 

the frosting

1/4 cup tahini

1 tbs pbfit powder

½ tsp vanilla

dash cinnamon

the process

  • preheat oven to 350, and spray a baking sheet with avocado oil.
  • for the cookie, mash the banana in a bowl. add in all remaining ‘the cookie’ ingredients. using your hands, roll the batter into 9 balls across the cookie tray.
  • bake for 13 minutes.
  • while the cookies are baking, mix together ‘the frosting’ ingredients together in a small bowl.
  • once the cookies cool, place a dollop on frosting in the middle of each cookie!
