8 minute sautéed zucchini

Here's a super easy and flavorful sauteed zucchini recipe using just 4 ingredients:

Ingredients:

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • Salt to taste

Instructions:

  1. Wash and trim the zucchini. Cut them into half-moons or thin rounds, about 1/4-inch thick.
  2. Heat the olive oil in a large skillet over medium heat. Once hot, add the zucchini and spread them out in an even layer.
  3. Sprinkle the paprika and salt over the zucchini. Let them cook undisturbed for 3-5 minutes, or until the bottoms are golden brown.
  4. Flip the zucchini and cook for another 2-3 minutes, or until tender-crisp.
  5. Serve or store away in a glass, sealed tupperware!

TIPS:

  • For a bit more flavor, you can add a minced garlic clove to the pan along with the olive oil.
  • If you like things spicy, you can add a pinch of red pepper flakes along with the paprika.
  • Serve the sauteed zucchini on its own, as a side dish, or over pasta or rice.
  • You can also get creative and add other vegetables to the pan, such as onions, bell peppers, or mushrooms.
