healthy almond butta cookies

the ingredients

the dry

1 cup oat flour

optional: 2 tbs protein powder OR collegen (I used Gainful)

1/2 teaspoon baking soda

1/4 teaspoon salt

the wet

1 teaspoon vanilla extract

1/4 cup honey (can sub coconut sugar OR maple syrup)

4 Tablespoons creamy almond butter

4 ounces unsweetened applesauce

the extra love

1/4 cup mini chocolate chips (I used Lily's)

optional: handful of pretzels (I used Goldfish Pretzels)

the process

  • preheat oven to 350 and line a baking sheet with parchment paper (or silicone sheet).
  • mix all the dry ingredients in a large bowl. add the wet ingredients. fold in the chocolate chips + other mix-ins! 
  • use a spoon to scoop out batter onto sheet! note that the cookies do not expand / rise much at all, so form into desired cookie shape & size (I made huge ones, so a full batch was about 8). 
  • bake 8-9 minutes. immediately devour.
