fluffy chocolate chip muffins

no protein powder. no processed ingredients. just the good stuff.

In a large bowl, combine: 

  • 1.75 cups oat flour
  • 1/2 cup @lakanto sugar (can use monkfruit sweetener or coconut sugar)
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup+/- chocolate chips

In a separate bowl, mix:

  • 1 egg
  • 2 tbsp greek yogurt
  • 1 tbsp maple syrup (or honey!)
  • 1 tbsp oil (avocado or olive works)
  • 1/2 cup coconut milk (can be any ;) )
  • 1/2 tbsp lemon juice

Pour wet into dry, mix until combined. Scoop into lined muffin tin, top with extra chocolate chips. Most likely 8-10 muffins. Bake @ 425 for 8 mins, remove from oven and drop in a square of chocolate 🍫 reduce temp to 350 and bake for another 15-17 MINS.
