blueberry coconut granola

this extra crunchy, grain-free granola is definitely on track to compete with Purely Elizabeth blueberry hemp granola - I won't lie!

Ingredients:⁣

1/2 cup chopped walnuts ⁣

1/2 cup chopped cashews, crushed ⁣

1/2 cup almonds, slivers

1/2 cup pumpkin seeds⁣

2 tbsp cup chia seeds ⁣

2 tbsp dried blueberries

1/3 cup flax meal⁣

1/3 cup coconut oil (melted)⁣

1/4 cup maple syrup ⁣(can sub honey)

2 tbsp cup coconut flakes⁣

1 tbsp vanilla⁣

2 tsp cinnamon⁣

Pinch of sea salt⁣

*almond or coconut flour to absorb excess moisture⁣

Directions:⁣

Preheat oven to 400 degrees ⁣

In a large bowl, combine all nuts, seeds and flax meal + cinnamon

Add melted coconut oil, maple syrup and vanilla and stir well⁣

Add just enough almond or coconut flour to absorb excess liquid and blend ⁣

Pour mixture onto a baking sheet lined with parchment paper in an even layer; sprinkle coconut and salt on top⁣

Bake for 24-28 minutes, or until lightly browned ⁣(**honestly i just kept periodically checking it and stirring it)

Remove, let cool! eat as-is, sprinkle on top of yogurt, or even topped with fruit!
